Black-Eye beans (vigna unguiculata)
Although called beans, these are actually a mature variety of cow pea (also known as "Asparagus beans" and "Yard Long Beans"). In fact, they are the mature seeds from the "Yard Long Beans" often seen at greengrocers specialising in Far-Eastern vegetables. Although they originated in India, and are now cultivated in much of Africa, they have become the traditional bean in the Creole-style cooking of the southern U.S.A.
