Chop suey

A pseudo-Chinese dish originating in Chinese restaurants in the U.S.A (probably in and around Chicago), as a way of using up leftovers. So combinations can be endless, but include bean sprouts and often noodles. The dish is "traditionally" topped with thin omelette slice. See Cioppino
