Chow Mein

A Chinese dish; the chow section coming from the pidgin English, imported by the Chinese who helped build America"s western railways.

The dish is in the style of Southern China, and comprises stir-fried egg noodles - but almost any ingredient can be added for flavour - such as sliced breasts of chicken, vegetables, prawns, or a mélange of all three. See our Recipe Section
