Christmas cake

A large, rich fruit cake, flavoured with dried fruit, candied peel, spices and sometimes nuts. The better versions are made well before Christmas, and have brandy, or another liqueur, added - they mature into a much better cake.

Christmas cakes are generally covered in Royal icing, and this over a layer of marzipan; and might also be decorated with small Christmas figures, especially if there are children in the house. See 'Marzipan'; ' Royal icing'
