Colston Bassett and District Dairy

A top-class dairy, specialising in making Stilton cheese. It's certainly one of the most highly-regarded of the producers being to the Stilton Makers Association (SCMA). The dairy is named after the village of the same name.

Although it's not a farmhouse dairy, it's the smallest of the Stilton creameries.

The dairy makes 'Blue Stilton', 'White Stilton' and 'Shropshire Blue (q.v.) - using pasteurised cows' milk cheese produced by several local farms. The creamery uses vegetarian rennet.
