An excellent Gouda-style cheese, made by the Willems family at Coolea, Macroom, County Cork, Ireland. The cheese is made from local pasteurised cow's milk, from a herd of Dutch MRI cows.

Cheeses are made from a very old Dutch Gouda recipe, and ripened for a minimum of 2 months. As it further ages, its texture changes from semi-hard to hard and when reaching 18 months is almost toffee-like.
