An award-winning Irish soft cows" milk cheese, made by Breda and Jim Maher in County Tipperary from unpasteurised milk. It has been described as an Irish Camembert, because it"s made in a similar way and has a flossy white mould rind. But Cooleeney is richer and wetter than Camembert and the rind is thicker. The flavour is full and strong when the cheese is ripe. Available, throughout the year, from the best cheese shops. See (
