An award-winning Irish soft cows" milk cheese, made by Breda and Jim Maher in County Tipperary from unpasteurised milk. It has been described as an Irish Camembert, because it"s made in a similar way and has a flossy white mould rind. But Cooleeney is richer and wetter than Camembert and the rind is thicker.
