Cos lettuce

The general term for a lettuce with long crisp, slightly bitter, leaves - but no heart. Popular in the eastern Mediterranean. "Little Gem" is a popular form of cos lettuce, and is now regarded as correct for Caesar Salad - as is Romaine (see photograph), this being of medium size, and not as bitter as some of the larger varieties.
