Crab; Shore (Carcinus maenas)

This is the "original" soft-shelled crab, coming from the Venice lagoon. Crabs are reared in hatcheries and marketed just after they shed their shells. Both in the spring, the males again in the autumn.

In their hard-shell state they are only modestly-flavoured, but are quite good baked - but better used in soups. Not occurring in British waters. See 'Crab'
