An excellent Irish goats" cheese made by Luc and Anne Van Kampen, from unpasteurised milk. It has its origins in a Gouda recipe, so the cheese has a silky, supple texture. The cheese tastes smooth, but the goats" milk gives a final kick. Availability is limited, as the cheese is only made between spring and the autumn, and only stocked by the best shops. The Van Kampen"s also make Mine Gabhar. See 'Mine Gabhar'
