an excellent Irish goats" cheese made by Luc and Anne Van Kampen, from unpasteurised milk. It has its origins in a Gouda recipe, so the cheese has a silky, supple texture. The cheese tastes smooth, but the goats" milk gives a final kick. Availability is limited, as the cheese is only made between spring and the autumn, and only stocked by the best shops.
