Cruibins/Cruibeen; to cook

Take 12 pickled rear trotters; 1 big peeled carrot; 1 big peeled onion, studded with 2 cloves; 1 bay leaf; and a small bunch of mixed fresh parsley and thyme. See 'Cruibíns/Cruibeen'

Put these in a heavy saucepan, and cover with water. Bring to the boil, and skim off any froth. Reduce the heat so that the liquid just ripples, and cook for about 2-2
