Demidoff; Prince Anatole
A Russian prince who lived in France, and was one of the greatest gastronomes of the Second Empire.
An elaborate chicken dish is named in his honour, this consists of chicken sautéed in butter, served with puréed root vegetables, artichoke hearts and onion rings and topped with a slice of truffle. The cooking juices are then mixed with Madeira and Demi-glace. See 'Artichoke'; 'Demi glace'
