Duck fat

Rendered duck fat is the traditional cooking medium in South West France, where it is used for general frying, and the making of confit and cassoulet. It hasn"t been explained by science, but in spite of/because of this dietary habit, deaths from heart disease are extremely low. See 'Rendered'
