Eddoe/Eddo

A small, tropical vegetable, with a brown hairy skin - the root of the taro - popular in India where they are prepared and eaten like potatoes. They have a sweet, nutty taste and are excellent mashed with a little grated nutmeg. Wear gloves when peeling.
