Eryngo (eryngium maritimum)

A spiny seaside weed with thistle-blue flowers, and greenish-blue leaves, sometimes known as sea-holly - it"s a member of the umbelliferae family, that includes carrots. The long fleshy roots can be candied like angelica and make excellent toffee, but are hard to remove from the ground.
