Appert; Nicolas (1749-1841)

A French confectioner, who in 1809 wasawarded a prize by Napoleon Bonaparte for his process of preservingfood by heating it inside hermetically-sealed glass jars. AlthoughAppert's system worked perfectly, it wasn't until the work done byLouis Pasteur many years later that the reasons why were fullyunderstood.
