A soft unpasteurised cows milk cheese, made by The Neal's Yard Creamery in Herefordshire, using traditional calf's rennet. It's similar to a French triple-creme, with a mild, clean, slightly mushroomy flavour. It's ripened for 2-3 weeks and available throughout the year in 200gr rounds.
