Fish; Fat

The following fish, often found in British fishmongers, have a high proportion of fat, so little or no extra fat is needed when cooking them. Modern opinion is they are of particular benefit to health.

Albacore (Long-Fin Tuna), Eel, Herring, Mackerel, Pompano, Salmon, Sardine, Shad (Alice Shad), Smelt, Tuna, Trout, Whitefish (Powan/Gwyniad). See 'Fish'; "Fish; Lean"
