Goat's milk

This has a higher fat content than cow"s milk, but is a useful alternative to those having a cow"s milk intolerance. It has a stronger flavour, and is widely-used for making cheese.

Goat"s are good producers of milk, a good doe will average 4 pints a day for 10 months, although many produce much more - a "Saanen" doe holds the record with over 14 pints in a single day.

If you enjoy cooking take a minute to look at ‘Simon Scrutton French Cookery Classes’ on Google – and learn how to make top class bistro-style dishes. Suitable for beginners upwards. Small classes.
