A form of flavoured seasoning, traditional in Northern Italy, and a necessary accompaniment to Osso Bucco (when it should be sprinkled over the top of plates when serving). It is delicious mixed into green vegetables, with a little olive oil; or mixed with breadcrumbs to form a coating for chicken or fish. For a recipe see Gourmet Britain Recipe section.
