An award-winning, semi-soft, Irish cows' milk cheese made by the Tom & Giana Ferguson at Gubbeen House, Schull in West Cork. The milk is pasteurised, but produced on their own farm. At its best its peachy-pink and smells of mushrooms and cellar; and has a pliable texture. It's aged from between 4 to 8 weeks, and is available throughout the year.
