Gum Arabic

A substance obtained from certain species of acacia [Acacia senegal]; (all are members of the pea family). It"s used in medicine, adhesive manufacture, but of culinary interest in confectionery and as a stabiliser in processed foods and "ready-made" meals. See'Stabilisers'
