Halibut; Greenland (Reinhardtius hippoglossoides)

Although of the same Pleuronectidae family, this fish shouldn"t be confused with the "true" halibut.

It reaches a maximum length of about a metre, and inhabits northern waters, as its name implies. Its flesh is much more fatty in content than its more prestigious cousin, so although it makes pleasant eating, it is particularly suitable for smoking, and is very popular in this form in Denmark.

If you enjoy cooking take a minute to look at ‘Simon Scrutton French Cookery Classes’ on Google – and learn how to make top class bistro-style dishes. Suitable for beginners upwards. Small classes.
