A large shark inhabiting both sides of the Atlantic, and growing up to about 4 metres. It gets its name from its head, which is shaped like a sideways hammer, with eyes set in the projections.

If found on your fishmongers slab treat as swordfish - do marinate in oil, the grill and serve with lemon.

If you enjoy cooking take a minute to look at ‘Simon Scrutton French Cookery Classes’ on Google – and learn how to make top class bistro-style dishes. Suitable for beginners upwards. Small classes.
