An unpasteurised cheese, made by a company formed by a partnership between Randolph Hodgson, of Neal's Yard (q.v.) and Joe Schneider, creator of Daylesford Organics (q.v.).
The cheese has been made in the style of Stilton, but under the rules of the protected Stilton producers, the milk for making this cheese must first be pasteurised. Stichelton is a recreation of an unpasteurised Stilton by another name. The cheese is made at Collinthwaite Farm, on the Welbeck Estate in Nottinghamshire, from the milk of Friesian-Holstein cows, and is named after the original name of Stilton village. At the time of writing, it is available from Neal's Yard Dairy and Welbeck Farm Shop.
