A traditional Northern Italian dish consisting of rich, creamy rice (generally arborio), flavoured with mushrooms, onion, chicken, seafood and suchlike. Often a little dry white wine is added, and the dish is finished with grated Parmesan or Pecorino cheese. See our Recipe Section.
