Crushed roasted peanuts are a common seasoning throughout most of South-East Asia; and are particularly used for Satay sauce.
Make them as follows -
1.Put peanuts in an ungreased, well heated, heavy frying pan over a medium heat, and stir until they are roasted. The red skins will turn crisp and papery
2.Allow them to cool, then rub them with both hands and blow the skins away.
