Baked potato

A potato cooked by natural heat in the oven. Larger, old potatoes are best for this; and Desirée, Golden Wonder, King Edward, Marfona, Maris Piper, Pentland Crown, Pentland Dell, Pentland Squire and Romano - give the best results. Supermarkets continue to recommend Cara, but this is to do with their regular shape, not their flavour - which is disappointing. For a recipe see our Gourmet Britain recipe section.
