Melba, Dame Nellie

The stage name of Helen Porter Mitchell (1861-1931). Melba toast is named after her (devised to ameliorate her diet during an illness in 1897 and thought to have been created by César Ritz) and Peach Melba. Her stage name was adopted in tribute to Melbourne - the city of her birth. See 'Melba Toast'; 'Peach Toast'
