Hot dog / hotdog

Correctly made, Hot Dogs should be made with a smoked Bockwurst sausage. These are very hard to buy in Britain, as is the correct German mustard. A good imitation of the latter can be made by mixing half English and half Dijon mustard varieties together; sauerkraut can be bought at supermarkets (and further improved by being cooked with a little dry white wine); and Herta probably make the best widely available frankfurter. For true ingredients visit "The German Wurst and Delicatessen" 127 Central Street, London EC1 (Tel: 020-7250 1322). See 'Frankfurters'

If you enjoy cooking take a minute to look at ‘Simon Scrutton French Cookery Classes’ on Google – and learn how to make top class bistro-style dishes. Suitable for beginners upwards. Small classes.
