Correctly made, Hot Dogs should be made with a smoked Bockwurst sausage. These are very hard to buy in Britain, as is the correct German mustard. A good imitation of the latter can be made by mixing half English and half Dijon mustard varieties together; sauerkraut can be bought at supermarkets (and further improved by being cooked with a little dry white wine); and Herta probably make the best widely available frankfurter.
