Hyssop, Culinary uses

The flowers are delicious tossed in salads. It"s an aid to the digestion of fatty foods, so a little added to Yorkshire pudding batter produces an interesting flavour, and aids digestion. In Gascony and the Basque country it"s included in bouquet garni, and used to flavour olive oil. In the U.S.A. a little is sometimes added to fruit pies. See 'Hyssop'
