Kirkham, Mrs - Lancashire Cheese

Without doubt, at the time of writing - and for many years previously - the producer of the best Lancashire cheese.

Ruth Kirkham, makes her cheese every day in her dairy on the family farm, using a three-day curd.

Unpasteurised milk comes from the family's own Friesan herd that grazes on fields of meadowsweet and clover, and cheeses are made in the same manner as her mother and grandmother before her – a son Graham is also very much involved.
