An excellent Scottish unpasteurised ewe's (sheeps") milk cheese, made by Humphrey Errington, near Biggar in Lanarkshire. It is cream to brown inside, and develops a fudge-like consistency and heavy dark-blue veining. It"s aged from between 6 and 12 weeks, older cheeses having - in the words of the cheesemaker - "quite a nip".
