Lancashire cheese

A hard, white, crumbly cows milk cheese; with a mild but pleasant tang. Factory-made cheeses bare little resemblance to these still made on individual farms. It is probably the best cheese for cheese on toast/Welsh Rabbit. Mrs. Kirkham"s is worth seeking out, but use a more basic "Farmhouse" version for cooking. See 'Kirkham'
