A Central Asian flat, but leavened, bread; called 'yufka' in Turkey. It is ubiquitous at mealtimes in Armenia, Azerbaijan and Georgia. It comes in two varieties - soft, used as a wrap with a variety of fillings; and crisp, used as a cracker.
