Lincolnshire poacher

An award-winning unpasteurised cows' milk cheese made by Simon & Jeanette Jones at Ulceby Grange in Lincolnshire since 1993, and is like a tangy top-quality Cheddar in style, and packed with savoury flavours. Simon learnt his craft from the late Dougal Campbell, and the cheese resembles Dougal's T'yn Grug in style.

The evening and morning milks are mixed to make the cheese, and after moulding and being pressed for 48 hours, they are covered with a plastic coating, which protects them until they have grown their own rind. Cheeses are matured for about 12 months, but some are kept back for up to two years are sold as 'Vintage' cheeses. Cheeses are made in 2.3kg & 18kg truckles.
