Liver sausage

A form of charcuterie, generally made with pork liver and pork meat. Some are firm enough to slice, others are designed to spread. The most expensive are made from calves" liver (kalbsleberwurst) or from goose liver. They are all sold cooked, and designed to be eaten cold.
