Lobster; Spiny (Palinurus elephas)
A crustacean growing up to 50cm and living between the Mediterranean and South West England. It is suitable as a substitute in all recipes calling for lobster. It is called langouste in France, and sometimes called crawfish or crayfish in Britain, but shouldn"t be confused with freshwater crayfish, which are more scampi-sized.
