Mackerel; Spanish (Scomberomorus maculatus)

A misleading name, as this fish inhabits the eastern seaboard of North America, and related species live in the waters of South-East Asia, where it"s popular in curries and stir-fries.

This is a slightly larger fish than the Mackerel living around our shores, but looks similar and if found on your fishmongers slab, should be treated in the same manner.

If you enjoy cooking take a minute to look at ‘Simon Scrutton French Cookery Classes’ on Google – and learn how to make top class bistro-style dishes. Suitable for beginners upwards. Small classes.
