Mushrooms - Preparation and cooking

There's no need to wash or peel cultivated mushrooms, just wipe with a damp cloth. If you pick your own field mushrooms, the skin will be tougher, and should be peeled off the caps.

If frying in butter, a squeeze of lemon juice, near the end of frying takes away any extra richness, and gives them a lift.
