Niolo

A Corsican ewe's milk cheese (sometimes made with goats' milk). It is generally found brine-washed and matured for about 3 months - in this form it has a coarse texture and sharp, tangy, flavour. It is also sometimes sold fresh, when it is altogether milder in character.
