Oeufs meulemeester

A traditional Belgian method of serving eggs in the Bruges area. Hard-boiled eggs are shredded, then mixed with prawns or shrimps and covered with a cream sauce containing chervil, parsley and mustard - before being sprinkled with grated cheese and browned.
