Offal

The edible parts of an animal other than cuts of muscle. These include brains, chitterlings, feet, head, heart, liver, kidneys, lungs, spleen, sweetbreads, tail, tongue and tripe. The name comes from the Old English 'off fall' and the German 'Abfall' (meaning rubbish). In the U.S.A these are called Variety Meats.
