Olive Oil, Storage of

Initially, try to buy oil from a shop with a high turnover; good olive oil will start to deteriorate after about a year, even if kept in perfect conditions.

Then keep oil tightly sealed in a cool place away from direct sunlight. It can be refrigerated, but will become cloudy when cold, but the flavour remains unaffected, and the oil will clear when returned to room temperature.
