Opah (lampris regius)

A deep-water fish, mainly found in the Southern Atlantic, but occasionally venturing further north.

It is round in shape, hence its alternative names - "moonfish" and "sunfish"; and can grow up to 1.5 metres in length, which corresponds to a weight of about 50 kilos. It has firm flesh, which make it suitable for cerviche-type dishes - or when cooked, any recipe when monkfish might be used.

If you enjoy cooking take a minute to look at ‘Simon Scrutton French Cookery Classes’ on Google – and learn how to make top class bistro-style dishes. Suitable for beginners upwards. Small classes.
