Panada

A flour-based mixture traditionally used to thicken and bind quenelle and mousse mixtures. It is rather out of favour, with the popularity of a lighter style of cooking - eggs or egg yolks generally being used instead.

If you enjoy cooking take a minute to look at ‘Simon Scrutton French Cookery Classes’ on Google – and learn how to make top class bistro-style dishes. Suitable for beginners upwards. Small classes.
