Beet (beta vulgaris)
The family of vegetables that includes sugar beet, beetroot, chard and mangolds.
Before cultivation. It originally grew wild in Mediterranean regions. Although its normally the root part that's eaten, the leaves are nutritious are a good source of beta carotene. They are a popular green vegetable in certain parts of Italy, where they're cooked with olive oil and garlic. See our Recipe Section
