Parmentier; Antoine-Auguste

An 18th century French economist and agronomist (1737-1817), who wrote several books on food, famed for promoting the popularity of potatoes in France - which had previously been scorned; his name now applies to a number of potato dishes. He had evidently learned to like them while held as a prisoner of war in Prussia during the Seven Years" War.
