Large round freshwater fish with firm, white, sweet flesh. The name is rather a generalisation for several fish, but in Britain most often refers to the 'Perca Fluviatilis' (well-regarded for its flavour) and growing up to about 50cm/20cm.

If you enjoy cooking take a minute to look at ‘Simon Scrutton French Cookery Classes’ on Google – and learn how to make top class bistro-style dishes. Suitable for beginners upwards. Small classes.
