A close-textured sheep's cheese, made in the style of a Manchego, by Stephen & Tessa Fletcher at Ram Hall, Berkswell in the West Midlands – using unpasteurised milk from their herd of 350 Friesland sheep.

Cheeses are matured for 8 months or more, and weigh 3-4 kgs.

It grates well, and can be used whenever you might use a hard pecorino. The cheese was originally sold under the name of Ram Hill.
